Crispy Chickpea Avocado Toast
Ingredients:
1/2 cup cooked chickpeas
3/4 tsp extra virgin olive oil
1/4 tsp cumin
1/8 tsp garlic powder
1/8 tsp smoked paprika
1/8 tsp sea salt, plus more for garnish
1/2 ripe avocado
1 slice whole grain bread, toasted
1/4 medium lemon, juiced
1 tbsp chopped cilantro (optional)
Instructions:
Preheat your oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
On the prepared baking sheet, add chickpeas, olive oil, cumin, garlic powder, smoked paprika, and salt. Mix well to coat chickpeas evenly.
Bake in the oven for 20 to 25 minutes until chickpeas turn crispy.
Once done, mash the avocado evenly between the slices of toasted bread.
Top with roasted chickpeas and drizzle with lemon juice.
Season with more salt and garnish with chopped cilantro, if desired.

Ingredients:
2 cups chickpea flour
1/2 tsp baking powder
1 1/2 cups water
2 medium tomatoes, diced
2 cups baby spinach, chopped
1/2 cup sliced pitted Kalamata olives
1/2 cup chopped basil leaves, plus more for garnish
2 tbsp extra virgin olive oil
2 medium avocados, sliced
Instructions:
In a large bowl, whisk together chickpea flour, baking powder, and water until smooth.
Add diced tomatoes, chopped spinach, sliced olives, and chopped basil to the mixture. Mix well.
Heat olive oil in a non-stick pan over medium-high heat.
Pour the mixture into the pan, spreading it evenly. Cover and cook for 8 to 10 minutes until the bottom is golden.
Place a large upside-down plate over the pan and carefully flip the frittata onto the plate. Slide it back into the pan and cook for an additional 5 to 8 minutes until fully cooked.
Once cooked, top the frittata with sliced avocado and garnish with additional basil leaves if desired.

1 1/2 tsp mayonnaise
1/2 medium avocado, sliced
1/2 stalk green onion, sliced
1 nori sheet, quartered
Instructions:
In a bowl, mix together the drained tuna, ground mustard, and mayonnaise until well combined.
Lay out the quartered nori sheets on a clean surface.
Divide the sliced avocado, tuna mixture, and green onions evenly among the nori sheets.
Roll each nori sheet into a hand roll, starting from one corner and rolling towards the opposite corner.
